Lighter Version of my "spice" cake

I lightened up one of my all time favorite recipes last night. My great aunt used to make this cake called "Sarah's cake" and it's delish for breakfast or any other time of day. I substituted applesauce for the oil and truvia for the sugar. It turned out perfect and so moist! Enjoy at 186 calories a slice, cut into 16 slices using a bundt pan.

1 box yellow cake mix
1 box jello instant pudding-vanilla
4 eggs
3/4 cup water
3/4 cup applesauce or oil
dash of vanilla
2 ts cinnamon
Mix well with mixer and pour into a well sprayed bundt pan and bake at 350 until done, usually about 40 minutes.

Starting Point and Weekly Review

I am going to have my weigh in days on Friday's and todays weight is 215. OUCH! But it is what it is, I am not ashamed to say it out loud, hello you can tell by looking at me I am a whale. Ok, enough beating myself up.

This week, I did improve in a few areas:
1. I tracked good or bad what I ate on mfp
2. I tracked my water intake, more than before but not enough.
3. I planned my lunches for a few days- this is always my downfall is lunch where I consume the most calories!
4. I have made new friends thanks the fb page we adore!

I have a long ways to go and alot of weight to lose but baby steps and seeing how many calories are in the foods I love will just have to be modified right?

I made a smoothie this morning for breakfast and my toddler who is 2 loved it and was eating frozen blueberries out of the bag! Love it-

With tomorrow beginning a new month I will start the 30 day shred tomorrow so I can track all 30 days and measurements.

Day 2 of c25k done! Sweaty and hot here in Texas!

Starting measurements

So I decided to measure myself. Here are my stats even though it's the ugly truth... Waist 43, below belly button 49 and hips 49. Oh and each thigh 27 1/2. When I got married in 2005, our anniversary is next weekend, I weighed 60 lbs less and my waist was about 31.
I am enjoying c25k and will start 30 day shred today as well.

Toddler eating fruit

J has gotten burnt out on some of his fruits so I tried natural pb and cut an apple up along with blueberries in his yogurt and he loved it!!! He eats healthier than I do and I am glad but also learning that I need to follow his patterns.

C25k and pic

So I started with c25k today and it's honestly not so bad. I sweated and felt like I worked out afterwards so I was happy! While J rode his truck around the yard I followed him and completed it. Day two of counting calories even though I was over I am glad I counted them! Man how do people drink a gallon of water a day? I am good to get in 8 glasses. Here is a pic of me currently. I will lose this weight! But while doing so I enjoy dressing up and looking gaudy sometimes!!!

I am back! I do not expect to have much time to blog but I absolutely love reading them. I have been inspired recently by mamalaughlin.com she is a woman after my own heart who tells it like it is. She lives in tx too so somehow I feel a connection!! Weird I know- but I plan on blogging my journey to lose weight along with toddler food finds for our now 2 yr old... I haven't cries yet saying that. Short story- I love food and enjoy baking along with cooking and it has caught up with me. On this hour ey I need to lose 60 lbs. I am taking this one day at a time. Here we go!
